Once he was old enough to travel the overseas call became too strong and he spend a few years in some of London’s finest hotels and restaurants. Whilst in the UK, he was swept off his feet by an Australian girl, now the same girl is his wife. Once they arrived in Australia he worked in a pub in rural Victoria for a while and was part of the original team that took over Quay with Chef Gilmore.

Leaving as Peter’s sous-chef to pursuit the next step in his career he worked at Claudes, also a three hatted gastro temple before moving to Melbourne, where he ran a couple of hotels -with his wife before opening their critically acclaimed and ‘hatted’ restaurant Merricote. Rob and Bron decided to sell their restaurant in 2017, after a very successful 6 year run.

Rob returned to Quay in early 2015. Achieving the high standards set out to delight guests with chef Peter Gilmore’s vision, dishes and creating memorable experiences. This tenure lasted four years. Just before the world halted due to a little global pandemic, Rob worked on his semi-permanent residency called Lekker, within the iconic Windsor Hotel

After the pandemic Rob opened Chancery Lane, a classic brasserie in the heart of Melbourne CBD, known for its “Fruit de Mer” and caviar bumps. The call to the country to live with his wife full-time came, and in the summer of 2022 Rob moved to Wheatsheaf, where he tends to his chicken, sheep and gardening, whilst entertaining his creative side with projects like the Floating Swine Fellowship and Gluttony.
